Ingredients
1 lb bottom round roast (cubed into 1" pieces)
1 Tbsp vegetable oil
2 c water
1/2 tsp salt
1/2 tsp pepper
2 carrots, sliced
1 potato, cubed
1 stalk celery, diced
1 onion, chopped
2 Tbsp flour
Directions
  1. In a 4 quart Dutch oven, heat oil over medium heat (1-2 minutes).
  2. Add cubed beef; cook about 15 minutes, stirring occasionallym until brown on all sides.  Add water, salt and pepper and heat until boiling.  Reduce heat to low and simmer approximately 2.5 hours, until beef is almost tender.
  3. Stir in remaining ingredients, except flour.  Cover, and cook another 30 minutes (until vegetables are tender).
  4. Add flour, gradually stirring into the beef mixture.  Heat to boiling and stir until thickened.
